Hi, I’m Chef Tony Matassa of BBQGuys.com a Shopperschoice.com site. Welcome to gas grilling 101. In this video we’ll look at several different things that you can do to ensure your maximum grilling pleasure.
When getting ready to grill, always begin by checking your fuel supply to ensure you have enough on hand. Also, ensure you’re grease management system is clean and ready to go. If you know you wont be using your warming rack and or your rotisserie, remove these items to give yourself more working room. It’s a good idea to keep all grilling tools in one place and make sure they’re at the ready before you begin.
Now is a good time to prep your food items, you will want to have all food items fully prepped and ready to go before your begin. So you can relax and really enjoy your grilling. Once prepped, always pre-heat your grill, by turning all burners on high and closing the hood for 15-20 minutes. Once thouroughly pre-heated, lightly coat your cooking grids with oil, close the lid, and set your control knobs to your desired cooking temperature.
If your grill has more than one burner, it is a good idea to set a hot side and a warm side. Do this by setting one side of your grill to medium hot or hot and the other side to medium low or medium; depending on what you’re cooking. This allows you to sear on one side of your grill and finish cooking through on the other. It also provides a place for you to move food if the hot side starts to get out of control.
Now we’re ready to grill, keep consistency simple by placing food on the grill from left to right and back to front. Before turning your first side give one or two items a little nudge, if they don’t want to release they are probably not ready to be turned. Let them cook for another minute or two. When their ready, just continue the left to right back to front order when flipping and removing.
While cooking, keep your hood closed as much as possible, your food will cook faster and more evenly.
Another good thing to have on hand is a cast iron pot or skillet. They’re great for making quick sauces, boiling marinades, or warming dessert toppings. They heat evenly and their extra weight keeps them more stable on the grill.
After removing your food from the grill, tent with foil to rest. While resting, it’s a good idea to “burn-off” your grill; by setting all burners to high, closing the hood, and allowing your grill to burn off the excess residue. Once the grill stops smoking, turn it off and lightly brush off any excess with a wire brush. Give your grids another light wipe with oil and your grill is ready the next time you are.
