We interviewed 10 more competition barbecue teams at the Memphis in May World Championship of Barbecue Competition. Each team offers their top advice and tips for mastering your smoker. Whether you’re a backyard cook or interested in entering the competition circuit you’ll love these behind the scenes interviews.
Next up, we took some time to chat with Kyle Storms from Nashville, Tennessee. Kyle talks about his love for barbecue. The best part about it is that BBQ is that it’s an experiment that you get to eat. Along the way, you make friends with other BBQ enthusiasts, sharing new recipes and trying out new things. Every time you make a new BBQ recipe or try out a new grilling technique, you get to eat the results of your experiment!
The barbecue community is also rich with people of all skill levels and experiences. You probably have a friend, or a friend of a friend, that has been cooking for years. There are some men and women in the barbecue competition circuit that have been cooking for 10, 20, or even 30 years. Take advantage of the knowledge that these people have. They can tell you what they’ve gone through and give you their experience to help you become a better, more informed BBQ pitmaster. You can also learn from a lot of great barbecue competition winners online, especially through outlets like YouTube. These are great ways to take your barbecue out of the backyard and elevate it to the level of competition barbecue, but you don’t get the opportunity to ask questions online. If it’s your only option, ask questions in the comments and forums to try to spark a conversation with experienced BBQ pitmasters. But, the best way to learn is in person so you will be able to ask the teacher questions about how they do things or why they BBQ the way they do. It’s a great way to get input and feedback.
If you want to take your barbecue skills to the next level, Kyle Storms recommends getting a Big Green Egg. These kamado style grills come in all different sizes, so you can get a MiniMax if you are short on patio space or get an Extra Large if you like grilling for company. No matter what size you get, you’ll have your Egg forever. It has a limited lifetime warranty and it’s heavy and durable. On a Big Green Egg, you can cook anyway you like. Use it to grill and sear steaks like a normal grill, or turn it into an outdoor convection oven to roast a turkey, bake bread, or make pizza. You can also easily use the Big Green Egg as a smoker, making it a versatile addition to your backyard barbecue game.
Those who are brand new in the grilling, smoking, and barbecue game often don’t have their skills refined. That’s okay when using a Big Green Egg, because it’s easy to use and very forgiving. You don’t have to be spot-on with your times and temperatures when cooking on a Big Green Egg. So long as you’re somewhere in the range, you will be able to create the best barbecue you and your friends have ever tasted. No need to be a top-notch chef when cooking on a kamado grill! The temperature control is so easy with the Big Green Egg, too. Simply use the bottom vent to let more or less air into the air-tight, insulated unit, and the temperature will respond. Shut it down most of the way to create low-and-slow cooking temperatures, or open it all the way to crank up the heat for searing steaks and cooking burgers. You can cook anything you would use in Memphis in May and other competition barbecue contests, including pork, ribs, chicken, and beef brisket.
Every one of us has the capabilities of producing great food, especially when you’re cooking on a reliable barbecue or grill. You just may be missing a few crucial pieces of information. Even missing one little piece of information can make the difference and totally change the outcome of your food. That’s why Kyle Storms recommends talking to people and being willing to learn from the great barbecue pitmasters out there. If you’re grilling and smoking food but you’re not getting the results you want, ask someone how they do it. Chances are good that you can learn a small piece of information about time, temperature, smoke flavor, or more that will take your backyard barbecue game to the next level. Improve the quality of your food by investing in a great smoker, like the Big Green Egg, and seeking information to make you a better pitmaster.
